I made these bars for a recent birthday party that I had. I picked them out of my recipe box archives simply because they matched the color theme of my dessert table (Black & Red Party theme Ideas). After making them though, I remembered why I had kept the recipe for so long…they are delicious!!
Strawberry White Chocolate Cream Bars:
Crust:
1 pouch Betty Crocker sugar cookie mix
1/2 cup butter, softened
1 egg
Filling:
1 cup white (vanilla) baking chips
8 oz. cream cheese, softened
Topping:
4 cups sliced fresh strawberries
1/2 cup sugar
3 Tablespoons cornstarch
1/3 cup water
10-12 drops red food coloring (this is optional, but gives a nice color to the topping)
Heat oven to 350 degrees. Grease bottom only of a 15x10x1 pan (you can use a 9×13 pan as well, your bars will just be thicker). In large bowl, stir cookie mix, butter and egg until a soft dough forms. Press dough evenly in bottom of pan. Bake 15-20 minutes or until light golden brown. Cool for 30 minutes.
In a small microwaveable bowl, microwave baking chips uncovered on high for 35-45 seconds. Take chips out and stir. If they are not completely melted, place back in the microwave for 15 seconds at a time until melted and can be stirred smooth. In medium bowl, beat cream cheese with mixer until smooth. Stir in melted chips until blended and spread over crust. Refrigerate while making the topping.
In a small bowl, crush 1 cup of the fresh strawberries. In a 2 quart saucepan, mix sugar and cornstarch. Stir in crushed strawberries and 1/3 cup water. Cook over medium heat, stirring constantly, until mixture boils and thickens. Stir if food color. Cool 10 minutes.
Gently stir in remaining 3 cups of strawberries. Spoon topping over filling.
Refrigerate 1 hour or until set. Store covered in refrigerator.
