If you like popcorn and cake batter, this is your lucky day!! The combination of these two yummy flavors are a marriage made in heaven.
You will need popcorn (air popped or microwave) oil, yellow cake mix, white melting chocolate (chocolate chips or almond bark), coconut, and sprinkles.
First you need to pop your popcorn. If you are using kernels, then pop 7-8 cups of popcorn. Otherwise, one bag of microwave popcorn will give you the amount you need.
Then, melt your chocolate chips in the microwave. Melt your chocolate very slowly and check it about every 15 seconds. Once the chocolate chips are smooth, add your cake batter mix, coconut and oil. Stir until thoroughly combined.
In a large bowl, pour the chocolate mixture over your popcorn. Stir until all kernels are coated.
After thoroughly stirred, spread out the popcorn onto a parchment paper lined baking sheet. Spread popcorn apart as much as possible.
Now, it is time for sprinkles. I love this recipe because you can change the sprinkles you are using to match any holiday or theme that you are making them for. Since I am making these for Easter, I am using a bright and springy mixture of sprinkles.
Once your popcorn is covered with your sprinkles, then let the popcorn air dry. Once the popcorn has dried and hardened (about an hour) you can break apart and store in an airtight container.
Serve in a fun treat bowl!
Cake Batter Popcorn Bites Recipe:
7-8 cups popped popcorn (or one bag microwave popcorn)
12 oz. white chocolate chips or almond bark
3 Tablespoons oil (canola or vegetable)
1/2 cup yellow cake mix
1/3 cup shredded coconut
sprinkles
Pop your popcorn and set aside in a large bowl.
Melt chocolate in microwave for 45 seconds. After that heat in 15 seconds intervals, stirring in between each interval until smooth. Do not over cook or it will ruin your chocolate.
Once the chocolate is smooth, stir in oil and cake mix. Stir thoroughly until well combined.
Then drizzle chocolate mixture over your popcorn. Stir until all popcorn is covered. Spread mixture onto a parchment paper lined baking sheet. Spread popcorn out and add sprinkles.
Leave to air dry and harden (about one hour). Once dry, break apart and store in an airtight container.
