Autumn Acorn Cookies

Acorn cookies are a cute and delicious way to celebrate the upcoming arrival of Autumn.  The combination of peanut butter from the cookies and milk chocolate from the kisses and chips are a perfect combination for a quick snack. They are super easy and quick to make and anyone that tries them are sure to come back for more.

 

 

These Acorn Cookies are made out of mini Nutter Butter cookies, Hershey milk chocolate kisses, and milk chocolate chocolate chips.  With these three ingredients and 15 minutes, you will end up with a festive and delicious treat.

To make these Acorn Cookies, first take 1/2 cup of milk chocolate chocolate chips and melt them in a glass bowl in your microwave.

Most newer microwaves will have a “melt” option.  If you have this, then use it, as this is the easiest way to melt your chocolate.  If you do not, then simply place in microwave for 30 seconds and stir.  If the chips are not completely melted, then continue heating and stirring in 15 second intervals until smooth.

DO NOT overcook the chocolate or it will sieze up and leave you with a lumpy clump that will be no good.  The best rule for melting chocolate in a microwave is “low and slow”.

 

 

 

 

 

 

 

 

 

Once the chocolate is melted, unwrap your Hershey kisses and place them in a bowl along with your other remaining ingredients.  It works best to set up your ingredients in an assembly like fashion.

Now take a Hershey kiss and dip the bottom in the melted chocolate.

Side note, I like to wear a kitchen glove while doing this so that my finger prints do not get all over the Hershey Kiss.  It is not necessary, I just think that it gives the cookies a more smudge free look in the end.

Next, attach the dipped Hershey Kiss to one side of the Nutter Butter cookies.

There are usually a few cookies in the bag that do now have a perfect cookie shape.  Sometimes half of the cookie has slid off of the filling.  If you have some of these in your bag, simply try very gently to slide the unaligned cookie over so that it sits perfectly on top of the other cookie half.

 

 

 

 

 

 

 

Once you have attached all of the Hershey Kisses to the Nutter Butter cookies, then lay on a cookie sheet or cooling rack and refrigerate for 10 minutes.

Lastly, take a chocolate chip and dip it into the melted chocolate.  Then, attach to the other end of the Nutter Butter cookie.

Place cookies on their side and allow to completely cool and then you are done!!

These Acorn Cookies are great for any type of Autumn gathering or even on a Thanksgiving buffet table.

Festive and delicious….yum, yum, yum!!!

Ingredients
  • 1 8 ounce bag of Nutter Butter Mini Cookies
  • 1 12 ounce bag of Hershey milk chocolate kisses
  • 1 bag chocolate chips (milk chocolate)
Instructions
  1. Melt a ½ cup of the chocolate chips in a microwave safe bowl.
  2. Dip each Hershey kiss into the melted chocolate and attach to one side of the Nutter Butter cookie.
  3. Once all are attached, place in refrigerator for 10 minutes to set.
  4. Next, dip a single chocolate chip into the melted chocolate and attach to the other end of the cookie.
  5. Place on their side and allow to completely cool and set.
