Looking for a quick, easy, AND delicious salad?
This salad is sooo good that even my children beg for it. In fact, they brought it to school today in their lunches. Imagine that, a salad that kids actually beg for…who knew such a thing existed??
The beautiful strawberries give it a natural sweetness while the red onion gives the salad a little punch. Top it with a creamy poppyseed dressing and you have pure perfection!
Feel free to use your favorite variety of lettuce in this salad. I like to use a mix of spinach and green leaf lettuce or romaine. Those varieties tend to be the favorites around my house.
The day I went shopping for these ingredients the spinach was not looking to inviting. So, I opted to skip the spinach and stick with just the leaf lettuce. You will also need strawberries and a red onion.
Simply wash and tear lettuce. I like to run mine through a salad spinner once washed to get all of the excess water off of the leaves. I also store my lettuce in the spinner as it stays extremely fresh and crispy in it.
Next, add slices of strawberry and red onion to the top of the lettuce. Right before you are ready to eat, top it with poppyseed dressing and dig in!
